Chipotle Margarita Mango Salsa combines red pepper, avocado, red onion, mangos, black beans, chipotle peppers, and margarita mix for a spicy, sweet treat!
Is there anything better than fresh salsa in the summer? I’m not a huge fan of this heat, but one thing I do love about summer is how accessible fresh produce is. A Saturday morning at the farmer’s market is a Saturday morning well spent.
You can have the best damn salsa all year round, but not mango salsa. Mango salsa is a seasonal gift from the gods, and it’s one of my all time favorite summer snacks. And not just any mango salsa, I particularly crave this mango salsa. This is next level. This is margarita chipotle mango salsa. It’s my go-to flavor combo of spicy and sweet, and it’s irresistible! I occasionally just eat it with a spoon, to be honest. Chips are good too. Also so so good on salads, lettuce wraps, and grilled chicken and fish. Oh and eggs. The possibilities are endless…
Now, even though this is margarita chipotle mango salsa. I won’t hate you if you don’t like spicy stuff or margaritas, and decide to just make it regular mango salsa. I’m a little sad for you, but I’m willing to get over it. If you’ve never had chipotle peppers in adobo sauce, let me tell you, they are HOT! I recommend starting with 1 or 2, and adding in chipotle peppers until it gets to the heat you want. The mango, margarita mix (even though it’s just a little bit), and the avocados do a really nice job of cutting the heat. For the record, my husband’s family is more sensitive to spicy food than I am, and everyone did okay with 5 peppers. I’ve also used both margarita mix, and pre-made margaritas. Either is fine, use what you have on hand or whatever meets your preference.
This salsa is best served chunky style, so go ahead and dice your produce into nice size pieces. I blend the chipotle peppers and the margarita mix together using my Nutribullet. This helps spread out your spice evenly, so you don’t get a huge, fiery hot bit of chipotle pepper. If you don’t have a blender that’s okay, just make sure you take a little time to really cut up those chipotles. When everything is prepped, simply mix it all together. Then invite your friends over, because you just made some pretty bomb salsa, and conveniently opened up a bottle of margaritas!
- 1 red pepper
- 2 avocados
- 2 mangos
- 1 medium red onion
- ½ of black beans
- juice of 1 lime
- 5 chipotle peppers in adobo sauce
- ⅓ cup margarita mix
- Chop your red pepper, avocado, mango, and red onion into nice sized chunks
- Rinse black beans and add to the mix
- In a blender, combine lime juice, chipotle peppers, and margarita mix and blend until smooth
- Pour over salsa and stir to combine
- **Note- chipotle peppers are very hot, if you've never had them, start with less and add more until you get to your desired level of heat
