Honey mustard chicken salad made in ten minutes thanks to a three ingredient dressing and rotisserie chicken!
Welcome to recipe number two of our Leftover Rotisserie Chicken series! Earlier this wek I told you why I become so emotionally attached to rotisserie chicken, and shared an easy recipe for thai chicken pizza. Today’s recipe for honey mustard chicken salad is just as easy, and makes for a perfect healthy lunch.
Scale of 1-10 how much do you like mustard?
I think I tip the scale at 11. I love any and all mustards. I’m pretty sure I audibly squeal when a restaurant says they have homemade mustard. Who’s with me?
This honey mustard vinaigrette has only three ingredients (I bet you’d never guess because each one is in the name…). You can use pretty much any mustard except for plain yellow mustard. I made this dressing twice last week and used spicy brown mustard once, and stone ground mustard the second time. Both are delicious, but the stone ground packs a little bit more punch. Which is bad or good depending on your tastes buds.
For vinegar I love to use Trader Joe’s white balsamic (modena) vinegar, but you can also use regular white distilled vinegar, found at any grocery store. (Linked for visual reference but much more expensive on Amazon.)
This is such an amazing recipe to keep in your back pocket and takes about a minute to make!
You can top this salad with whatever you’d like, but I love avocado and honey mustard together! Throw on as many veggies as you have in your fridge and a couple pieces of leftover rotisserie chicken and you’ve got yourself a pretty mean salad.
- leafy greens (spring mix, lettuce, or spinach)
- rotisserie chicken
- sliced avocado
- sliced red onion
- sliced tomato
- 3 tbsp honey
- 3 tbsp spicy brown mustard
- 1 tsp white distilled vinegar
- Slice up your veggies and lay them on top of your lettuce.
- Top with a couple pieces of rotisserie chicken.
- Whisk together honey, brown mustard, and distilled vinegar and pour over as dressing.
