Healthy chicken salad seasoned with “everything” spice, mixed together with greek yogurt, mustard, honey, turmeric, grapes, and celery.
Paul and I are currently reading this awesome book we got from our church called, “Divine Direction – 7 Decisions That Will Change Your Life.” We’re only a couple chapters in, but we’ve already gotten so much out of it. In the first chapter, Craig Groeschel talks about discipline. He explains why he flosses his teeth every single night (no matter what) before bed, and how this one act of discipline creates a ripple effect of more disciplined, healthy life decisions. In the book, he challenges you to start one new discipline.
Paul and I decided that 4 times a week we will pack a healthy lunch together the night before. Our reasons are that it puts us in more control of our finances, our health, and ultimately, our day. So on Sunday, I got in the kitchen with the intent of meal prepping some lunches for Paul and I to eat this week.
This healthy chicken salad recipe was born out of a desire for cheap, clean, ready-to-go lunches, and my recent obsession with everything seasoning. It’s the stuff that goes on everything bagels, but without the bagel. I stumbled upon a jar at Trader Joe’s (of course), and I’ve been putting it on a whole bunch of stuff ever since. Especially eggs and toast in the morning. YUM. You’ve all probably noticed by now that I am mildly obsessed with Trader Joe’s. Sorry. If you’re not close to one, don’t worry! Just google “everything seasoning”. There are tons of recipes out there to make your own, and you absolutely DO NOT need the one from TJ’s for this recipe.
The everything seasoning is my favorite, but there are a lot of other great things in here as well. Subbing mayo for greek yogurt adds even more protein to keep you full until dinner. And there’s the turmeric. Turmeric is a bright yellow spice that gets put in a lot of Indian dishes because it is used for curry. And it’s crazy good for you. It’s a strong antioxidant, it’s anti-inflammatory, and it supports brain and joint health.
All together this makes for a super healthy chicken salad. Enjoy either on a bun or by itself!
