I noticed the other day that all my favorite cocktails start with an “M”.
Martinis, mojitos, moscow mules, and my number #1, margaritas. If there’s one thing I love, it’s having a cold margarita in the summertime. The only problem is that as much as I love margaritas, the regular sugary ones give me a stomachache! Que gutrock.
That’s why I love this skinny margarita. It tastes just as good as the regular kind, there’s no skimping on the tequila, and it has significantly less sugar. It’s made with prickly pear cactus water, frozen strawberries, tequila, lime juice, and agave nectar for sweetener.
If you’ve never had (or even heard) of cactus water before, it not only tastes good, but it has a lot of benefits. It’s all natural, low calorie, has potassium, and is loaded with electrolytes. Drinking depletes your body of electrolytes and potassium (and makes you feel really great the next day), so having cactus water in your beverage helps keep you hydrated while you sip. No next-day headaches!
Blue agave is what really helps keep this skinny margarita low carb. Again, all natural, and it’s one and a half times sweeter than regular sugar so you can use less of it! It has a lower glycemic index than both honey and sugar, which means it won’t spike your blood sugar due to a slower digestion rate. Yay science. Frozen strawberries top off the sweetness and make it nice and cold to cool off with.
- 1 bottle true nopal cactus water
- 2½ cups crushed ice
- 1 lb bag of frozen straberries
- 6 oz. tequila
- 2 tbsp organic agave nectar
- juice of 1 lime
- Blend together ice, strawberries, tequila, and cactus water
- Add agave and lime juice and blend
- Garnish with lime and a salted rim
