This pineapple salsa is sweet, simple, and perfect for summer.
Pineapple is one of my favorite summer treats. I honestly think it tastes like candy! Whether it’s grilled, like on this pepper jack stuffed chicken burger, or in salsa form like this. I especially love this pineapple salsa because it’s made up of only 4 ingredients. It’s just pineapple (duh), cilantro, onion, and lime juice. It’s great by itself, but my favorite way to eat it is on top of these pulled pork nachos. YUM.
Paul and I go on vacation next weekend and I can hardly wait! We have our 7th (yes, I said 7th), and last wedding of the summer in Syracuse, NY, and we’ll be staying there for a couple of nights. After that, we’re headed to Niagara Falls, ON for the holiday. This will be my first time visiting either place and I’m really looking forward to it. Upstate New York and the Falls are both known for their beauty and I’m so excited to experience them. Even better now that I have a new camera to test out and take pictures with. I do think it’s funny that we won’t actually be in the U.S. to celebrate the 4th though! They do a big firework show right over the falls, so I don’t think it will feel any different.
Have any of you been to Niagara Falls? What was your favorite part!? Any good restaurants? I told Paul we HAVE to get some poutine for lunch one day. One day we are heading up to Niagara-On-The-Lake to visit some wineries and shop around. We’ll be spending two days near the Falls doing the activities and probably visiting Clifton Hill. Who else has a fun summer vacation planned?
- 1 pineapple diced
- 1 small red onion diced
- 2 tbsp chopped cilantro
- Juice of 1 lime
- Dice pineapple and onion
- Add chopped cilantro and lime juice and mix together
- Serve with chips, on nachos, a salad, or a sandwich!
